NOTE:
Very fine “cracks” also called crazing, will form inside your pot as you use it and are not a defect. These allow the water’s micropores to be released evenly into the food during cooking.
Over time and with frequent use, your clay pot will darken, retaining scorch marks and stains but developing an appealing patina.
If you want to use your dish for both savory and sweet dishes and you have the storage space, you may want to invest in two pots so that any absorbed flavors won’t affect the taste of your recipe.

USE & MAINTENANCE:

  • When using terracotta for the first time, it should be washed thoroughly in warm water.
  • Do not use detergent or soap as this will likely block the delicate pores.
  • Completely immerse the dish in warm water for at least 4 hours (up to overnight) and then prepare to use it without letting it dry.
  • The pot will absorb a considerable amount of water and it’s this liquid that will help create the steaming process. For subsequent uses, you need to only rinse the dish briefly, until thoroughly wet.
  • Your terracotta piece can be used in the oven.
  • After use and wash, allow to air dry completely before storing it.
  • To clean use a nylon scrubber or brush with a little baking soda. For stubborn stains, soak overnight. Recommended use is 2 tablespoons of baking soda per quart of water.
  • It’s necessary to take extra care when removing the hot terracotta dish from the oven. Be sure to use oven mitts or baker’s pads and place the pot on a trivet, a wooden board, or a folded towel.
  • If it comes into sudden contact with a cold work surface it could crack. Always allow the pot to cool down before placing it into cold water
